Avocado Cottage Cheese Toast Recipe

I tried this one time, and then never made avocado toast another way ever again! The avocado is pureed together with cottage cheese to make a delicious, high-protein, super creamy spread.

Ingredients

Units Scale
  • 1/2 avocado
  • 1/2 cup cottage cheese
  • 1/4 tsp. salt*
  • 1/8 tsp. black pepper
  • 2 slices toast

Instructions

  1. Put avocado, cottage cheese, salt, and pepper into a food processor or blender. Blend until very smooth, scraping down sides occasionally.** Then blend for another full two minutes to get it extra whipped.
  2. Dollop half of the avocado mixture onto each slice of toast.

Notes

*If you’re going to be garnishing the toasts with salt and/or pepper for that bit of crunch and extra punch of flavor, then reduce the salt in the above recipe to 1/8 teaspoon and omit pepper.

**Sometimes a less powerful blender isn’t able to get the cottage cheese and avocado moving around enough for it to puree. If this happens to you, add 1 or 2 teaspoons of water, stir, and try again.
