  • 6 bacon slices
  • 6 tsp. cold unsalted butter
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
  • Cooking oil spray or favorite oil in an oil sprayer

  1. Preheat oven to 400°F.
  2. Prepare baking tray with parchment paper. Spray cooking oil on parchment paper. Alternatively, you can brush 1 teaspoon of oil over it.
  3. Unroll each chicken thigh, season both sides with salt and pepper, put 1 teaspoon of cold butter inside, then roll back up, and wrap each chicken thigh with bacon.
  4. Place chicken thighs on baking tray and bake for 30-35 minutes until the temperature of chicken reaches 165°F as read on an instant read thermometer.
  5. If you would like the bacon to be crispier, put the chicken under the broiler for the last 2-3 minutes.
