Brown Sugar Glazed Carrots

Ingredients

  • 1 bunch carrots (approximately 1 lb.), peeled and washed with most of the green cut off
  • 1 Tbsp. olive oil
  • 4 Tbsp. butter
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 425°F. Line a cookie sheet with aluminum foil.
  2. Place peeled carrots onto baking sheet and pour olive oil over the carrots. Use your hands or a basting brush to ensure all of the carrots and remaining greens are covered as well.
  3. Bake for 20 minutes, flipping halfway through.
  4. While the carrots are baking, melt butter in a small bowl. Add in brown sugar and mix together until combined. When the 20 minutes are done, remove carrots from oven. Spread brown sugar mixture over the carrots evenly. Bake for an additional 5 minutes. Serve immediately.
