DESCRIPTION
Cottage cheese pureed with avocado and other classic guacamole ingredients is a delicious, extra-creamy, and protein-rich snack or appetizer.
Ingredients
- 1 cup cottage cheese
- 1/2 tsp. salt
- 1 clove garlic
- 3 avocados, peeled and pitted
- 1/4 tsp. lemon pepper
- 1/4 tsp. tomato powder (optional)
- 1/2 small onion, finely chopped
- 1/4 cup finely chopped cilantro
- 1/2 jalapeño pepper, seeds removed, minced
Instructions
- Measure the cottage cheese into a small food processor or blender. Add the salt and the garlic. Puree until smooth, scraping down sides occasionally. If it won’t blend well, add a teaspoon or two of water.
- Put the ripe avocado flesh into a large bowl and mash them with a fork, making them fairly smooth but still with some texture.
- Scrape the cottage cheese mixture onto the avocados, add the lemon pepper, tomato powder, if using, and stir. Add the onion, cilantro, and jalapeño. Stir well and serve.
