Cottage Cheese Queso Dip Recipe

Cottage cheese queso dip is a deliciously creamy protein-rich alternative to the usual queso, perfect with tortilla chips or veggies.

Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded Monterey jack cheese
  • 2 Tbsp taco seasoning*

Instructions

  1. Measure the cottage cheese, Monterey jack, and taco seasoning into a food processor or strong blender.
  2. Puree until very smooth, scraping down sides and stirring often. It will take a few minutes.
  3. Optional: If desired, transfer to a medium saucepan. Heat over low heat just until slightly warmed. Transfer to serving bowl immediately to stop the heating and help prevent curdling. If it does curdle, you can re-blend it in the food processor, blender, or using an immersion blender, and that will re-emulsify the mixture and make it smoother.

Notes

*One 1-ounce packet of taco seasoning contains 2 tablespoons. You can use store bought or homemade taco seasoning. Or, you can use the following: 2 tsp. ground cumin, 2 tsp. onion powder, 1 tsp. garlic powder, 1 tsp. chili powder, and 1/8 tsp. salt.
