Green Goddess Cottage Cheese Dip Recipe

Green Goddess Cottage Cheese Dip takes the idea of that amazing salad dressing and turns it into an easy dip that’s ready to enjoy in minutes. The recipe below gives a range for the amount of herbs to use. It’s honestly great no matter how much you use, but the color really changes to green if you use the full amount, unlike the whiter picture which uses the lesser amount.

Ingredients

Units Scale
  • 1 (16 oz.) container cottage cheese*
  • 1/2 to 1 cup packed fresh parsley leaves (preferably flat-leaf)
  • 1/2 to 1 cup packed soft fresh herbs**
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 clove garlic, roughly chopped
  • 2 Tbsp. olive oil or water

Instructions

  1. To a high-powered blender or food processor add the cottage cheese, herbs, salt, pepper, and garlic. 
  2. Pulse a few times to mix everything. Then puree until smooth, adding in the oil or water to help the blender blades get moving well.
  3. Once very smooth, transfer to an airtight container and refrigerate for at least an hour before serving.

Notes

*That’s equivalent to 2 cups.

**Use soft herbs like basil, dill, chives, chervil, and tarragon. It is best to avoid harder herbs like rosemary and thyme.
