Ingredients
- 1 (16 oz.) container cottage cheese*
- 1/2 to 1 cup packed fresh parsley leaves (preferably flat-leaf)
- 1/2 to 1 cup packed soft fresh herbs**
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 clove garlic, roughly chopped
- 2 Tbsp. olive oil or water
Instructions
- To a high-powered blender or food processor add the cottage cheese, herbs, salt, pepper, and garlic.
- Pulse a few times to mix everything. Then puree until smooth, adding in the oil or water to help the blender blades get moving well.
- Once very smooth, transfer to an airtight container and refrigerate for at least an hour before serving.

Notes
*That’s equivalent to 2 cups.
**Use soft herbs like basil, dill, chives, chervil, and tarragon. It is best to avoid harder herbs like rosemary and thyme.
