Homemade Italian Turkey Sausages

Italian turkey sausages are great to make at home. The best part is that you can customize them to your own preferences! We give you instructions for making them without special equipment, and for if you have sausage-making equipment tools already.

  • 5 lbs. ground turkey
  • 1.6 oz. Mild Italian Sausage Seasoning (buy here or make your own)
  • Crushed red pepper flakes (to taste, optional)


  1. In a large bowl, place ground turkey.
  2. Add Italian Sausage Seasoning and mix well.
  3. Place the mixture into a sausage stuffer (like this one or this one).
  4. Stuff the mixture in to collagen casings (like these) and then make desired length of sausage links.
