Got some cranberry sauce left in the fridge, or a can in the pantry to use up? This quick and cozy recipe turns it into something brand new: sweet-tart cranberry meatballs just for two. You can use homemade or storebought sauce, and even the meatballs can come from the freezer aisle, or you can use homemade. The sauce scales easily. You use twice as much cranberry sauce as BBQ sauce, so it’s perfect whether you’re using up a few spoonfuls or the whole can. Serve these as a game-day appetizer or spooned over rice for a fun weeknight dinner. Enjoy! – Christine
Ingredients
- 8 meatballs, thawed if frozen
- 1/2 cup cranberry sauce
- 1/4 cup BBQ sauce
- 1/4 tsp. ground cumin
- 1/4 tsp. smoked paprika
- 1/4 tsp. salt
- 1/4 tsp. pepper
Instructions
- In a medium saucepan stir together the cranberry sauce, BBQ sauce, cumin, smoked paprika, salt and pepper. Bring to a boil, stirring occasionally.
- Stir in the meatballs and continue to stir while it comes back up to a boil. Reduce heat to a low simmer and cook uncovered, stirring occasionally, until meatballs are heated through, 7-10 minutes.
