Leftover Roast Beef Stroganoff Recipe

Ingredients

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. cooking oil
  • 1 small onion, chopped
  • 2 cups sliced mushrooms
  • 1 garlic clove, minced
  • 1 Tbsp. all-purpose flour
  • 1 cup low sodium beef broth
  • 1/2 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. sweet paprika
  • 1/4 tsp. Worcestershire sauce
  • 2 cups cooked beef (beef strips, ground beef, etc.)
  • 1 Tbsp. sour cream

Instructions

  1. In a large frying pan melt butter then add cooking oil. Add chopped onion and cook on low-medium heat for 3-4 minutes, mixing often.
  2. Add sliced mushrooms and cook for 5 minutes.
  3.  Add minced garlic and flour. Stir to distribute. Cook for 1 minute on low heat, stirring constantly. Let simmer a few minutes to thicken.
  4.  Slowly add beef stock. Add Dijon mustard, salt, sweet paprika, and Worcestershire sauce.
  5.  Add leftover cooked beef. Heat through for about 5 minutes.
  6. Remove from heat, stir in sour cream.
