- 4 boneless, skinless chicken breasts or thighs
- 1 tsp. dried oregano
- ¾ tsp. salt
- ½ tsp. pepper
- 2 Tbsp. olive oil
- 1 cup low or no-sodium chicken stock
- 2 Tbsp. lemon juice
- 2 garlic cloves, minced
- Fresh parsley
Instructions
- Spray the slow cooker with cooking spray.
- In a small bowl, mix together oregano, salt, and pepper. Rub mixture over the chicken.
- Heat skillet to medium heat and add 1 tablespoon olive oil. Sear 2 chicken until brown – 2 minutes per side. Repeat with the remaining olive oil and chicken. Add chicken to slow cooker.
- Mix together chicken stock, lemon juice and garlic. Pour over chicken.
- Cook on low for 3.5 hours. Baste chicken with juices and continue cooking for an additional 30 minutes. Serve with an extra lemon wedge and fresh parsley.
