Slow Cooker Lemon Chicken

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp. dried oregano 
  • ¾ tsp. salt 
  • ½ tsp. pepper 
  • 2 Tbsp. olive oil 
  • 1 cup low or no-sodium chicken stock 
  • 2 Tbsp. lemon juice 
  • 2 garlic cloves, minced 
  • Fresh parsley 

Instructions

  1. Spray the slow cooker with cooking spray.
  2. In a small bowl, mix together oregano, salt, and pepper. Rub mixture over the chicken. 
  3. Heat skillet to medium heat and add 1 tablespoon olive oil. Sear 2 chicken until brown – 2 minutes per side. Repeat with the remaining olive oil and chicken. Add chicken to slow cooker. 
  4. Mix together chicken stock, lemon juice and garlic. Pour over chicken. 
  5. Cook on low for 3.5 hours. Baste chicken with juices and continue cooking for an additional 30 minutes. Serve with an extra lemon wedge and fresh parsley.
