This month we’re celebrating white fish with tips on how to buy the best fish, and the recipes that will make it more delicious than ever.

Breaded and pan-fried fish fillets were a staple in my house growing up, and they were also part of our traditional Ukrainian meatless Christmas Eve dinner. They were therefore both everyday food and special food. Strangely enough though, we didn’t eat white fish in many other preparations, and to this day, I still find myself stuck in that rut.
