Whether your garden overflows with zucchini or you simply love it, you’ll want to check out all these delicious zucchini recipes.
Have you heard of National Sneak Some Zucchini Onto Your Neighbor’s Porch Day? It’s a real thing, I swear. And it happens each year on August 8th. The idea is that many home gardeners end up with more zucchini than they can handle and they are all trying to give it away, to the point where they have to sneak it to their neighbors!
Now, while I don’t advocate for anyone breaking into their neighbor’s home for any reason, even to give them tasty garden extras, I do understand the issue. Zucchini can really get out of hand! That’s why I’ve teamed up with TheCookful’s great friend, Emily Paster, to come up with amazing ways, new and old, to use up that overly abundant summer vegetable.

In the weeks ahead, we’ll be bringing you info about the best ways to cook zucchini, a tutorial on making Homemade Zoodles, classic recipes like Zucchini Bread and Chocolate Zucchini Cake, and more adventurous recipes like Greek Zucchini Canapes, Zucchini Parmesan, and Salmon and Zucchini BBQ Skewers, Oh My!
We’re sure you’re going to find wonderful ways to use up your garden’s most abundant vegetable.
Before we jump in, I’d like to take a moment to re-introduce you to Emily. You may remember her from our Lamb Series. Or, perhaps you know her from her beautiful and informative cookbook. Emily is the author of four cookbooks, including the best-selling Epic Air Fryer Cookbook, and her latest book, Instantly Mediterranean: Vibrant Satisfying Recipes for Your Instant Pot, Electric Pressure Cooker & Air Fryer, which comes out in September 2021 but is available for pre-order now. To fall in love with more of Emily’s recipes and food writing, check out her blog West of the Loop.
It’s been a delight to work with Emily on this Zucchini Series, and to taste all of the delicious zucchini recipes. I know you’re going to love it all as much as I have.
Have a great day, and, if you get caught on any porches, don’t tell them I sent you!
Christine 😉
