Crispiest Baked Chicken Drumsticks Recipe

Ingredients

  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 3 lbs. skin-on chicken drumsticks (about 8)

Instructions

  1. Preheat oven to 250°F. Line a baking sheet with foil and top it with an oven-safe rack. Spray the rack with cooking spray.
  2. In a large bowl mix together the baking powder, salt, pepper, paprika, and garlic powder. Add the chicken drumsticks and toss until evenly coated. Arrange the chicken on the prepared rack.
  3. Transfer the baking sheet containing the rack and chicken to the oven and bake for 30 minutes to dry out the chicken and allow the baking powder to take effect.
  4. Increase the oven temperature to 425°F. Bake for 45 to 50 minutes, until chicken skin is crispy and the meat is no longer pink near the bone. It is best to test that the meat has an internal temperature of 165°F with an instant-read thermometer, being careful to not touch the bone.
