How to Make Quick Beef in Gravy

If you want your beef strips to have a nice sauce, like a gravy, it’s easy to do. You’ll follow the instructions in the article I linked above to make floured beef strips.

Then once the beef is cooked, slowly add two cups of low-sodium beef stock, stirring as you add it.

Some of the flour that was on the beef is going to mix with that stock to make a thin sauce. Bring it to a simmer before serving. Make sure you give it a taste in case you want to add more salt and pepper. A dash of Worcestershire sauce is always good here too!

If you want the sauce to be a little thicker, you can simmer it for 5-10 minutes to evaporate off some of the water. Or, you can make a slurry by mixing together 2 teaspoons of cornstarch with 4 teaspoons of water. Add the cornstarch slurry to the pan, constantly stirring. Bring to a simmer to thicken it.

Ingredients

  • 1/4 cup all-purpose flour
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder (optional)
  • 1 lb. beef strips
  • 2 TBS. vegetable oil
  • 2 cups low-sodium beef stock
  • 1/4 tsp. Worcestershire sauce
  • 2 tsp. cornstarch (optional)
  • 4 tsp. water (optional)

Instructions

  1. In a large bowl combine the flour, salt, pepper, and garlic powder.
  2. Add the beef strips and toss to coat.
  3. Transfer beef to a plate, shaking off excess flour. Discard excess flour.
  4. Heat a large skillet over medium-high heat. Add oil and heat until very hot.
  5. Add beef in a single layer and do not touch for 2 minutes.
  6. Flip beef and stir frequently until it is under your desired done-ness. It only really needs a minute or so.
  7. Remove from heat. While stirring, slowly drizzle in the beef stock. Put it back on the heat and bring it to a simmer.
  8. If you’d like the sauce to be thicker, in a small bowl combine the cornstarch and water until smooth. Add it all at once to the skillet. Stir until it comes to a simmer and thickens.
  9. Taste and season with salt and pepper, if desired.
