Ingredients

  • 1/2 cup butter, room temperature
  • 1/2 cup + 2 tsp. granulated sugar, divided
  • 1/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 cup almond flour
  • 2 tsp. cinnamon, divided
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt

Instructions

  1. In a large bowl, mix together butter, sugars, and vanilla extract until combined. (Save 2 tsp. of white sugar for the coating mixture.) Slowly incorporate flour, 1 teaspoon of cinnamon, cream of tartar, and salt. Mix together until mixture is well combined.
  2. Use a tablespoon measuring spoon to measure out dough and use hands to form into a ball. Set aside once rolled.
  3. On a plate, mix together remaining cinnamon and 2 teaspoons of sugar. Roll dough bites in the mixture.
  4. Place in an airtight container and refrigerate until served.
