Air Fryer Quesadillas

The trick to making air fryer quesadillas is knowing how to keep the top tortilla in place. We have all the tricks to make sure it stays in place!

Ingredients

  • 2 (6-inch) tortillas
  • 1/3 cup refried beans
  • 1/8 tsp. salt
  • 2/3 cup shredded cheddar cheese
  • 1 Tbsp. chopped green onions
  • Cooking oil spray (or us an olive oil sprayer)

Instructions

  1. Lay the tortillas on a plate. Spread half of each one with half of the refried beans. Sprinkle with salt.
  2. Top the refried beans on each tortilla with half of the cheese. Sprinkle with green onion.
  3. Fold the halves of tortilla with nothing on them overtop of the fillings and push down to help everything stick together. Spray tortilla tops with cooking spray. You should have just sprayed the side that was not initially spread with refried beans.
  4. Flip them over and spray the other sides with cooking spray.
  5. Transfer the quesadillas to the air fryer, making sure that the side you originally spread with beans is on the tops. Push down lightly on the tops.
  6. Set air fryer to 400F. Cook for 2 minutes. Open air fryer. If tops of tortilla have dislodged, put them back in place. Whether they had dislodged or not, press down on them a bit using a spatula to help keep things in place. Do not flip. Cook for 3 more minutes. 
  7. Flip quesadillas over and then cook until top is nice and brown, about 3-4 minutes.
  8. Remove from air fryer and let rest for 2 minutes before cutting and serving.
