Breaded Avocado Fries Recipe

Ingredients

Scale
  • 2 avocados, sliced 1/2-inch thick
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1 cup panko breadcrumbs
  • 1/2 tsp. salt, divided
  • 1/2 tsp. lemon pepper seasoning, divided
  • 2 Tbsp. low fat ranch dip

Instructions

  1. Preheat oven to 425°F. Spray baking sheet with cooking spray.
  2. Combine lemon & lime juice in small bowl. Mix bread crumbs, ¼ teaspoon of the salt and ¼ teaspoon of the lemon pepper in separate bowl.
  3. Dip avocados into juice, season with remaining ¼ teaspoon of salt and lemon pepper, and press into bread crumbs.
  4.  Lay avocados in a single layer on prepared baking sheet and bake until golden brown, 12-15 minutes.
  5.  Served with ranch dressing for dipping.
