Mushroom, Caramelized Onion, and Goat Cheese Pizza Flatbread

Ingredients

  • 2 Tbsp. olive oil, divided
  • 1 large sweet onion, sliced
  • 3/4 tsp. salt, divided, or more to taste
  • 8 oz. sliced brown mushrooms
  • 1/4 tsp. pepper, or more to taste
  • 1 1/4 lb. prepared pizza dough, homemade or store-bought
  • 1/2 cup crumbled goat cheese
  • 1 Tbsp. fresh thyme leaves (optional)

Instructions

  1. In a large skillet over medium-high heat, heat 1 tablespoon of the oil.
  2. Add the onion, cover, and cook until the onion begins to soften, about 5 minutes.
  3. Add 1/2 teaspoon of the salt.
  4. Reduce the heat to very low and cook, uncovered and stirring frequently, until the onion is a deep golden color, 35 to 40 minutes. Remove from the heat, add more salt to taste, and set aside to cool.
  5. While the onions are cooking, in a medium skillet over medium-high, heat the remaining 1 tablespoon of oil.
  6. Add the mushrooms, pepper, and remaining 1/4 teaspoon of salt and cook, stirring occasionally, until the mushrooms are browned and tender, 6 to 8 minutes. Remove from the heat, add more salt and pepper to taste, and set aside to cool.
  7. While the onions and mushrooms are cooling, on lightly floured surface, roll or spread the dough into an approximately 10-by-12-inch rectangle. Transfer to an oiled baking sheet and set aside 30 minutes.
  8. Meanwhile, preheat the oven to 500°F, with a pizza stone if you have one.
  9. Dimple the dough with your fingertips. Top with the onions, mushrooms, and cheese. Bake, with the baking sheet directly on the pizza stone if you have one, for 10 minutes.
  10. Sprinkle with the thyme, if using, and continue baking until browned, 3 to 5 minutes.
