Sous Vide Grilled Chicken

Using sous vide first for grilled chicken means you know the chicken will be perfectly cooked but still get the great flavor from the grill. Yum!

Ingredients

  • 4 (1” to 1.5” thick) chicken breasts
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground coriander
  • 1/4 tsp. ground cumin

Instructions

  1. Preheat a water bath to 140°F (60°C).
  2. Sprinkle the chicken on all sides with the salt and spices.
  3. Place in a sous vide bag in a single layer and seal it.
  4. Place in the water bath and cook for 2 and 1/2 hours, or until pasteurized.
  5. When ready to eat, remove the chicken from the sous vide bath and dry off well with a paper towel.
  6. Heat a grill to high heat.
  7. Place the chicken on the grill and cook for 1 to 2 minutes per side, flipping a few times, then serve.
