Summer squash can be a little more tender than zucchini or other vegetables like eggplant so cutting it a little thicker helps ensure the cooked dish is tender but not mushy.
– plain breadcrumbs – ground cornmeal – salt – pepper – garlic powder – onion powder – eggs – flour – yellow squash – Cooking spray – Parsley
Preheat air fryer.
Mix together plain breadcrumbs, cornmeal, salt, pepper, garlic powder, and onion powder in a small bowl.
Whisk eggs in a separate small bowl.
Place flour in another small bowl.
Take squash pieces and dip in flour, then egg, then breadcrumb mixture. Set aside until ready to cook.
