Snickerdoodle Bites

Snickerdoodles might be one of the most underrated cookies for the holidays. The cinnamon and sugar mixture that coats them goes perfectly with lots of holiday flavors. But they can take some time to make – between mixing the ingredients, chilling the dough, rolling them, and baking batch after batch. That’s when you need a no-bake cookie recipe instead.

What Are Snickerdoodle Bites?

These snickerdoodle bites take the flavor and components of a snickerdoodle cookie and combine them without any baking to make a quick dessert. You still get that great cinnamon and sugar taste you love, without any baking needed. It’s perfect to throw together when holiday cooking is already taking up your stove and oven or when you simply don’t feel like doing all that work.

Tips For Snickerdoodle Bites

One of the most important things to keep in mind is to make sure your butter is room temperature. This will ensure that it’s easier to cream together with the sugars and vanilla extract. If the butter is cold, it’ll be harder to mix together and you can end up with chunks of butter. Nobody wants that.

This recipe calls for cream of tartar which is generally found in snickerdoodles as well. This is something that’s not necessary, but it does add a subtle tang that snickerdoodles are known for.

I use almond flour in this recipe as it’s been found that eating all-purpose flour raw could be prone to bacteria. The almond flour could be substituted for oat flour if that’s something you have on hand instead.

Ingredients

  • 1/2 cup butter, room temperature
  • 1/2 cup + 2 tsp. granulated sugar, divided
  • 1/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 cup almond flour
  • 2 tsp. cinnamon, divided
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt

Instructions

  1. In a large bowl, mix together butter, sugars, and vanilla extract until combined. (Save 2 tsp. of white sugar for the coating mixture.) Slowly incorporate flour, 1 teaspoon of cinnamon, cream of tartar, and salt. Mix together until mixture is well combined.
  2. Use a tablespoon measuring spoon to measure out dough and use hands to form into a ball. Set aside once rolled.
  3. On a plate, mix together remaining cinnamon and 2 teaspoons of sugar. Roll dough bites in the mixture.
  4. Place in an airtight container and refrigerate until served.
