Note: Below you’ll find a recipe for a full 1/2 cup (4oz.) batch of Pork Chop seasoning. In addition, in case you’re trying to make a recipe for a few pork chops and you just want to make a little bit, we’ve also given a recipe that makes a small batch of just 2 tablespoons. The Perfect Pork Chop Ingredients
This pork chop spice is reminiscent of the flavors of BBQ pork with brown sugar, paprika, and mustard powder, along with with basic aromatics like garlic and onion. There’s also some nice herbs that always go well with pork: thyme, sage, oregano, and then a tiny bit of heat from the cayenne and black pepper.
You can use smoked paprika instead of plain for smoky flavor. If you’d like more heat, you can add in extra cayenne pepper. I also like a pinch of celery seed in here for extra aromatics. Smoked sea salt is also really nice here instead of regular salt.
How To Use Pork Chop Seasoning
The full recipe makes enough seasoning for about 24 pork chops. I recommend using about 1 teaspoon of the blend per chop, so 1/2 teaspoon per side. That’s for a 3/4-1 inch thick bone-in larger type of chop. If using a thinner pork chop, you’d want to put less, about 1/4 teaspoon per side.
You can sprinkle the chops with seasoning and then brush them with a bit of oil and cook them immediately, or you can season them, put them on a rack over a plate in the fridge and let the seasoning penetrate for 30 minutes to 3 hours, or even overnight.
You can also season pork chops and freeze them with the seasoning on. Thaw and then cook as normal.
This seasoning works great whether you want to air fry, bake, pan-fry, or grill your pork chops.
Make A Small Batch
This smaller batch makes just over 2 tablespoons of seasoning which will season 6 thick pork chops.

If you just want to approximate the flavors of this spice blend and add things to your chops on the fly, you’ll be doing equal parts brown sugar and paprika, half that amount of salt, a touch less than the salt of garlic powder, onion, powder, and mustard powder, and then half as much as the salt of thyme and sage, and then just a little bit of black pepper and oregano, less even of cayenne.
