What Is Green Goddess Dip?
You might be familiar with Green Goddess Salad Dressing, well this delicious dip is a variation on that fantastic recipe. The basic idea is that you have a creamy ingredient like mayonnaise, sour cream, or Greek yogurt and you blend it with fresh herbs to give it flavor. And achieve the signature green color, of course.
Why Use Cottage Cheese?
You will often see fat-free Greek yogurt used in these kinds of dips instead of sour cream or mayonnaise. I like that as a substitute, but I sometimes find it too tangy. Using the milder-flavored cottage cheese is therefore something I do often. Once it’s pureed, it’s as smooth as the other options. And it’s high protein and low-fat like Greek yogurt, so it’s still a nice alternative to sour cream or mayo. I love using it in recipes like my Cottage Cheese Chicken Salad.
You can of course use the sour cream or your favorite thick plain yogurt instead if you prefer. Or use softened cream cheese for half the amount along with any of those. Some people also like to add in some avocado for creaminess and extra green.
What Herbs Can I Include?
For this dip recipe, you want to use soft herbs like basil, dill, chives, chervil, and tarragon along with fresh parsley. It is best to avoid harder herbs like rosemary and thyme.
Also, avoid mint since it has a sweeter flavor that doesn’t work as well in this dip. Note that I’ve listed dill as one of the choices, but it doesn’t always play well with other herbs. If you’re using dill, also use the parsley but don’t include any other kinds of herbs that could clash with the taste.
Other than that, you can play around and find out which fresh herbs you like to use in addition to the parsley!
Making Green Goddess Cottage Cheese Dip
It’s so easy and ready in just minutes. Once you’ve chosen your herbs, you add those to a blender along with the cottage cheese. Some salt and pepper, and fresh garlic get added as well.
Blend up everything until smooth. You may need to add a little olive oil or water to get it to puree smoothly and to achieve your desired consistency. Remember though, we’re making a dip, not a dressing this time, so you do want it on the thicker side. I find that adding oil rounds the flavor out a bit and it is my preference. But adding water does the trick just tastes a little bit less good.
I find that this dip improves when it’s had some time to sit in the fridge. The flavors really blend and even out. So if you have time, transfer it from the blender to an airtight container and put it in the fridge for at least an hour.
Serving Cottage Cheese Dip
I think this amazing dip is best when served with an assortment of fresh veggies! Try carrots, broccoli, cherry tomatoes, cucumber slices, bell pepper, and celery sticks. It would also be good with nice multi-grain crackers, but I think the vegetables really help highlight the fresh herb flavor.
