Here at TheCookful, we love to make homemade salad dressings when time permits. It doesn’t always happen, but it’s delicious when it does.

A homemade dressing can really make any salad more exciting and tasty, and this Lemon Hummus Dressing is no exception. Because the hummus already has lots of flavor, there’s only a few more ingredients you’ll need to mix up this flavorful dressing for salads, rice bowls, and more.

Ingredients

Store-bought or homemade hummus makes the perfect base for a quick and easy dressing. Because the hummus already has garlic, lemon, cumin, and tahini, there’s no need to add too many extra ingredients, except a few staples you probably already have on hand, for thinning out the hummus.

This dressing is extra thick so it clings well to every ingredient in your salad bowl, but if you prefer a thinner dressing, simply add more lemon juice or oil, one teaspoon at a time, until the desired consistency is reached, and then adjust the salt to your taste.

How To Make Lemon Hummus Dressing

To make the Lemon Hummus Dressing, stir together the hummus, lemon juice, olive oil, salt, and pepper in a medium bowl until well combined and smooth. The consistency should be like runny yogurt: thick, but fluid.

Serve immediately, or store in the refrigerator in an air-tight container up to 5 days.

Using Hummus Dressing

Try it served on a healthy Rice Bowl, a green tossed salad, or this Quinoa Salad Bowl. It also works great as a dip for raw veggies, though you may want slightly less olive oil if using as a dip so it really clings to those carrot sticks and celery.

DESCRIPTION

Ingredients

  • 1/2 cup prepared hummus
  • 2 tsp. fresh lemon juice
  • 1 Tbsp. olive oil
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper

Instructions

  1. In a medium bowl stir together hummus, lemon juice, olive oil, salt, and pepper until well combined and hummus is the consistency of runny yogurt.
  2. Serve immediately or refrigerate, covered, up to 5 days.
