Note: Below you’ll find a recipe for a full 1/2 cup (4oz.) batch of Pot Roast seasoning. In addition, in case you’re trying to make a recipe for pot roast and you just want to make a little bit, we’ve also given a recipe below that makes a small batch of just 2 tablespoons. What’s In Pot Roast Seasoning?
There’s a classic recipe for pot roast that uses Lipton’s onion soup mix as the seasoning. For this seasoning recipe, I wanted to incorporate a bit of that flavor, which is why I’ve used the dried minced onion, onion powder, and beef bouillon powder.
When combined with the other dried herbs and spices, this makes for a very classically and deliciously flavored pot roast.
How Much Seasoning For A Pot Roast?
The amount of seasoning needed is more about surface area than the weight of the roast. You’ll want a reasonably thick coating, but not so thick that you can’t see the meat at all. For a 2 pound chuck roast, it will be about 3-4 teaspoons of pot roast seasoning.
Using Pot Roast Seasoning
There’s a few different recipes on my sister site, COOKtheSTORY, that are great for this homemade seasoning blend.
For a Perfect Pot Roast with carrots and potatoes, this recipe uses a chuck roast and gets seared in a skillet before going into the oven to cook slowly.
You could also use it for an Instant Pot Pot Roast to cut down the cook time a little bit – the Instant Pot is so great for that! Or if you’re not in a rush, use this Slow Cooker Beef Roast recipe.
And honestly, since this blend is made with so many basic crowd-pleasing aromatics and herbs, it can be used in just about any roast beef recipe. It works well on chicken or pork too, but I omit the beef bouillon if I plan to use it on those other meats.
Make A Small Batch
Just want to make enough for one or two roasts? Use this small batch recipe.
To Make 2 Tablespoons (6 Teaspoons) of Pot Roast Seasoning, Combine: |

• 2 and 1/4 tsp. dried minced onion (or 3/4 tsp. onion powder) • 3/4 tsp. beef bouillon powder • 1/2 tsp. onion powder • 1/2 tsp. garlic powder • 1/2 tsp. brown sugar • 1/2 tsp. dried basil • 1/4 tsp. dried oregano • 1/4 tsp. salt • 1/8 tsp. black pepper • 1/8 tsp. sweet paprika • 1/8 tsp. smoked paprika • Pinch of celery seed |
If you just want to approximate the flavors of this spice blend and add seasoning as you cook, you’ll be adding some minced onion, half that amount of beef bouillon powder, a touch less than that of onion powder, garlic powder, brown sugar, and basil. Then half that amount of oregano and salt, and just a bit of black pepper, sweet and smoked paprika, and then a tiny amount of celery seed.

- 3 Tbsp. dried minced onion (or 1 Tbsp. onion powder)
- 1 Tbsp. beef bouillon powder*
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. brown sugar
- 1 1/2 tsp. dried basil
- 1 1/2 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. sweet paprika
- 1/2 tsp. smoked paprika
- 1/4 tsp. celery seed
Instructions
- In a medium bowl mix together all ingredients until well combined.
- Transfer mixture to an air-tight container. Store up to 3 months in a cool, dry, dark, place for best flavor.

Notes
*If you’re using bouillon cubes, they vary in size, but the small ones are usually 1 tsp. and the extra large ones are about 1 Tbsp. each. So check your package, you’ll need 1-3 cubes, crumbled up well and then added to the mixture.
