Ingredients
This is almost a classic chicken salad recipe. Chicken, celery, and green onion with some seasonings like lemon juice and garlic powder. But it has avocado instead of mayonnaise.
You’ll definitely taste the avocado mixed into the chicken salad. But it’s not super-strong because there are so many other flavors going on. What you mostly get from the avocado is creaminess, which is what the mayo was in there for anyhow.
Another great substitute for mayonnaise in chicken salad is cottage cheese. It’s so good, so make sure to try my Cottage Cheese Chicken Salad too. Then you can let me know which recipe is your favorite in the comments.
What Kind Of Chicken?
I’ve simply called for cooked chicken in this avocado chicken salad recipe. You can pick up a cooked rotisserie chicken from the grocery store. You can easily cook Instant Pot Chicken Breasts, Air Fryer boneless skinless chicken thighs, or use leftover shredded chicken. Whatever cut you prefer or have leftover from your meal prep is fine, just make sure that it doesn’t have a lot of other flavorings going on that will overpower the delicious taste of this chicken salad.
The important part is that you finely chop the whatever kind of cooked chicken you’re using so it mixes nicely with the other ingredients.
Serving Chicken Salad
My go-to is to keep it simple and make chicken salad sandwiches. It’s an easy and satisfying lunch. Leave it plain or add in some lettuce, tomato, and red onion slices to your sandwich. Cucumber is really good in there too.
You could also make it into a wrap with a tortilla or stuff a pita with it. Or have it as a snack and just scoop it up with some crackers! So good.
